15-20 brussel sprouts (cleaned and cut in half)

4 oz Chorizo, diced

1 tsp. paprika

3 T Chipotle Olive Oil from The Tasteful Olive

1/2 tsp salt & 1/2 tsp pepper


1. Steam brussel sprouts in a small pot for about 8 minutes or until they begin to soften just slightly.

2. While steaming, saute the Chorizo in a dry pan at medium heat to render out the fat and crisp the Chorizo.

3. Add steamed brussel sprouts to the Chorizo (cut side down) and the olive oil.

4. Turn heat to medium and saute for 5 mins or until the sprouts just begin to brown on the bottom.

5. Dust with paprika, salt and pepper and serve immediately, drizzled with oil and Chorizo from the pan.
