Protein Packed Power Bowl

Dressing Ingredients:

¼ c Spicy Thai Peanut Butter by Eliot’s Adult Nut Butter (found only at The Tasteful Olive)

3 T The Tasteful Olive’s Persian Lime Olive Oil

2 T The Tasteful Olive’s Key Lime Balsamic Vinegar

1 T The Tasteful Olive’s Jalapeno Balsamic Vinegar

Bowl Fixin’ Suggestions:

½ c cooked quinoa

Salmon (can use cooked left-overs or a can of pre-cooked salmon)

Edamame (find pre-shelled beans in the frozen section of most grocers)

Avocadoes, sliced

Red Onions, diced

Carrots, shredded or diced  

Mangoes, sliced or diced

     To make dressing, mix Spicy Thai Peanut Butter with a splash of warm water (to help it melt), then whisk with the remaining oil and vinegars. Taste and adjust to your preferred flavor balance.   You can either mix the dressing with the quinoa at this point, or drizzle over all ingredients in the bowl. Place all ingredients in a bowl and serve.
