Sweet Potato Lemon Chick Pea Bowl

1   sweet potato, peeled and cut in small chunks

½ - 1 small head of broccoli, washed and cut

¼   Red onion, cut in small wedges

½ a can garbanzo beans, rinsed and dried

1 -2 large handfuls kale, washed

The Tasteful Olive’s Lemon Sicilian balsamic vinegar (or your choice)

The Tasteful Olive’s Extra Virgin olive oil

The Tasteful Olive’s Garlic olive oil (or your choice)

Sea salt & fresh cracked pepper

Preheat oven to 400 degrees. Place sweet potatoes and broccoli on pan. Drizzle with garlic olive oil and lemon Sicilian balsamic vinegar. Add salt and pepper to taste. Roast about 10 min until potatoes are tender and slightly brown and broccoli starts to turn bright green. Add red onions and kale to pan and drizzle with oil & vinegar, and salt and pepper, if desired. Roast another 10-15 minutes until potatoes and veggies are done to your liking.     While veggies are roasting, heat EVOO in a small pan. Add garbanzo beans to pan and saute for about 5 minutes, until slightly browned.   Drizzle in the Lemon Sicilian balsamic and saute for another 5-10 minutes, until the balsamic begins to caramelize on the beans. Remove from heat. Place all ingredients in a bowl. Serves 1-2. Enjoy!
