Roasted Fingerling Potatoes


1 - 1 ½ pounds fingerling potatoes

*2 T The Tasteful Olive’s extra virgin olive oil OR Wild Rosemary Fused olive oil

1 T chopped fresh herbs (savory herbs work well-rosemary, thyme and/or sage)

The Tasteful Olive’s Fleur de Sel OR Lemon Rosemary Sea Salt

Preheat oven to 425. Wash potatoes.  Grease baking dish with olive oil or line with parchment paper. Put potatoes in the baking dish and toss with oil, salt, freshly ground pepper and herbs to evenly coat. Cover with foil and bake for 40 minutes until potatoes are tender. Allow to cool before serving.

Optional: Drizzle with The Tasteful Olive’s White Truffle oil or serve with our Truffle Aioli Recipe for a decadent side dish.
