1 lb Great White Northern Beans, rinsed and picked over

1 med celery rib, coarsely chopped

2 lg shallots, diced

1 lg carrot, peeled and coarsely chopped

1/4 lb smoked bacon, diced (can use turkey bacon)

2 lg cloves garlic, coarsely chopped

5 qt chicken broth/stock, vegetable stock or cold water

1-2" sprig fresh rosemary

1 dried bay leaf

1/2 C The Tasteful Olive's Coratina-Frantoio Extra Virgin Olive Oil

Crusty fresh bread


Combine all ingredients except for olive oil in large slow cooker. Set cooker to high for 6 hours. Once beans are tender, taste and adjust seasoning. Drain beans with slotted spoon and serve slathered in the Extra Virgin Olive Oil with crusty bread.
