Passion Fruit Pepper Dry Rub

½ C granulated white sugar

3 Tbs Passion Fruit Chili Pepper by Salty Wahine

found ONLY at The Tasteful Olive

2 Tbs dried minced garlic

1 Tbs dried roasted garlic (can sub granulated garlic if you don’t have roasted)

This follows the tried and true “8-3-1-1” method for rubs. 8 parts sugar, 3 parts salt, 1 part pepper and 1 part creativity—with a little adaptation. Mix all ingredients together. Best with proteins like ribs, pork loin or chicken wings. For best results, let “marinade” overnight.

BONUS: Rub 2 lbs of country style ribs with the rub above. Place ribs on a foiled cookie sheet in 1 row. Cook in a pre-heated 350-degree oven for 45 minutes. Reduce heat to 250 and cook for another 2 hours or until ribs reach 145-degrees. Optional for deliciously sticky ribs: Baste every 20 mins with Carolina-style Passion Fruit mop sauce (see recipe by The Tasteful Olive’s Passion Fruit fusti).
