Spicy Thai Peanut Sauté



¼ Cup The Tasteful Olive's Lime Olive Oil

¼ Cup Eliot’s Adult Spicy Thai Peanut Butter from The Tasteful Olive 

1 Red & 1 Green Bell Pepper

1 Yellow Onion
1 lb skinless/boneless Chicken breast (sliced)

Salt to taste 


Pour half of the Lime Olive Oil in a sauté pan on medium heat. When oil is glossy and hot, add onions and sauté for 3 minutes. Add bell peppers stirring occasionally to soften but not to get color. Add a pinch of salt to each step. Once the vegetables are not quite cooked but getting soft (about 3-5 minutes), add the chicken breast.

Continue stirring and cooking until chicken appears to be mostly cooked through. Add the Eliot’s Spicy Thai Peanut Butter. Thin out the sauce with the remaining olive oil and cook until the chicken is cooked through and sauce has just slightly thickened.

Serve over rice or couscous and enjoy immediately!
