2 T of a Tasteful Olive's high intensity Extra Virgin Olive Oil

1 C Onion Medley - red & white onions, and scallions, cut in 2" strips

12 ounces Beef Sirloin Tips

1 clove garlic, chopped

1 tsp Italian Seasoning

Kosher salt and pepper to taste (*fresh milled pepper may be used)

1/3 C Sundried Tomato strips

1-1/2 C Kale, chopped

2 T The Tasteful Olive's Traditional Condimento Balsamic Vinegar

1/2 tsp fresh parsley, chopped



Heat a large size saute skillet over medium high heat.

Add onion medley to skillet, sitr and saute for about 2 minutes, then remove from skillet and set aside. Add beef tips to skillet and begin to brown them, then add garlic and spices. Cook and stir until beef has browned. Add tomato strips, cook 1 more minute, then add kale and keep tossing until kale has wilted and softened. Add balsamic vinegar to skillet and simmer to reduce.

Excellent and light summer entree! Yield: 2 large dinner portions.
