1-1/2 C cooked white rice

1 lb pork, cut into 1 inch cubes

2 scallions, chopped

1/4 C soy sauce

2 eggs

1 red pepper, diced

A SZECHUAN spice blend

KOROSAFFLO high-heat blended oil from The Tasteful Olive


Cover pork cubes in the SZECHUAN spice blend. In large wok or skillet over medium high heat, cook pork in the Korosafflo oil until cooked through. Remove pork and add another tablespoon of oil and scramble the eggs, then add chopped scallions and pepper and cook for 1 minute. Add pork to rice and pour on soy sauce. Add one more tablesoon of the SZECHUAN spice blend and stir to combine. Serve hot.
