1 - 12 oz pkg turkey cutlets

1/3 C ELKI Brand Basil Pesto (available at The Tasteful Olive)

1/4 C mayonnaise

1 C dry bread crumbs

1/2 C Parmesan cheese, grated

3 or 4 T Tasteful Olive olive oil (try the Garlic or Roasted Onion/Cilantro, or choose a medium intensity olive oil)

2 T butter


Combine pesto with mayo in shallow bowl and mix well. Mix bread crumbs with cheese on a shallow plate. Spread some pesto mixture on one side of a turkey cutlet with a knife. Drop the cutlet, pesto side down, in the bread crumbs. Spread the other side of the cutlet with more pesto mixture. Place coated cutlet in the bread crumb mixture and coat. Remove the cutlet to a plate. Repeat this for the other cutlets.

Over medium high heat, place olive oil and butter in large skillet and cook cutlets 3 or 4 at a time, turning once. Make sure cutlets are cooked thoroughly and crumbs are browned. About 8-10 minutes. Serve right away.
