Traditional scampi blends the taste of garlic, citrus bouquet of white wine and the richness of butter to form a sauce that makes everything taste better. This version gets an extra helping of freshness and citrus by using Persian Lime Fusion Olive Oil. When it's ready, this scampi sauce is sublime over chicken, shrimp or scallops.


6 T Persian Lime Fusion olive oil from The Tasteful Olive

3 cloves garlic, minced

1 tsp red pepper flakes

2 T medium intensity olive oil from The Tasteful Olive

1 chicken breast, cut into 1" square pieces

2 oz dry white wine

1 oz butter

Sea salt and pepper to taste



In skillet, mix the Persian Lime olive oil, garlic and red pepper flakes and turn heat to medium. Let garlic and red pepper start to flavor the oil. Turn to low.

In second skillet, add med. intensity olive oil and heat over medium high heat. Sprinkle chicken with salt and pepper on both sides and saute in the oil until done all the way through (6-8 min).

Once chicken is done, remove from the skillet and put it in with the Persian Lime olive oil. Add the white wine and stir to make sure the chicken is coated.

Cook for another minute and add the butter. Stir until butter is melted and chicken is coated in the sauce.
