Smoky Peach Chipotle BBQ Sauce

1 sweet onion, finely diced

2 T chopped garlic

3 peaches, peeled and diced

3 T The Tasteful Olive’s Olive Wood Smoked olive oil

1 T The Tasteful Olive’s Chipotle olive oil

1 C The Tasteful Olive’s Peach balsamic vinegar

½ C spiced rum or 1 tsp rum extract in ½ C water                               ½ C water

¼ C molasses                                                                                               ¼ C Dijon mustard

1 tsp The Tasteful Olive’s Vain Vanilla                                              

2 tsp The Tasteful Olive’s Applewood Smoked Sea Salt

2 T cornstarch mixed in 3 T cold water

Add the oils to sauce pan over medium heat. Once hot, add onion & garlic. Stir and cook till lightly browned.   Add peaches. Cook until they are all tender, reducing heat as needed to prevent browning (or about 3 minutes). Add rum, water, molasses, mustard, smoked salt & vanilla. Whisk and cook until mixture is just beginning to bubble. Mix cornstarch into the cold water, creating a slurry. Whisk sauce briskly as you add the cornstarch slurry. Cook an additional 3 min while whisking.   Once thickened, it is ready to use or refrigerate up to a week.
