Passion Fruit Pineapple Marinade & Sauce


2 – 4 Chicken Breasts (also great for chicken skewers or skirt steak)

¼ cup soy sauce

3 Tbs The Tasteful Olive’s Passion Fruit Balsamic Vinegar

3 Tbs The Tasteful Olive’s Pineapple Balsamic Vinegar

2 Tbs The Tasteful Olive’s Persian Lime Olive Oil

½ to 1 tsp Cayenne Pepper (based on your spice preference)


Combine all ingredients in a non-reactive container or zip-lock bag. Marinate at least 4 hours (best overnight) and take out of the refrigerator 30 minutes prior to cooking. Grill on a tinfoil sheet until internal temp reaches 155-degrees. Place chicken directly on grates until you get beautiful grill marks. Set aside to rest for about 10 minutes (the chicken will continue to rise in temperature as it sits, and should be about 165 at its peak).


While chicken is cooking, drain marinade juices into a sauce pan. Put on mid-high heat to boil, then turn to mid-low and reduce till sauce is thick. Serve spooned over the grilled chicken or as a dip sauce.
