What About Marinades?

Marinades are seasoned liquid mixtures that both add flavor and tenderize meat. They are a fast, easy way to create delicious meat dishes, especially with less expensive cuts of meat. Marinades must contain an ingredient to break down the meat fibers and let the flavors penetrate. This can be an acidic substance (vinegar, wine, spirits, lemon juice, etc.) or a natural tenderizing enzyme such as those found in fresh papaya, ginger, pineapple and figs. Oil is added to the marinade to help ingredients adhere better to the meat and to aid in browning during cooking.


3 Ingredients Needed For a Marinade:

1/4 C oil

* Extra Virgin Olive Oil from The Tasteful Olive is perfect. It has a rich, satisfying flavor and has all the health benefits. You choose one you might like!

1/4 C vinegar

* There's a wide variety of vinegars available. The Tasteful Olive's A-Preminum non-aged White Balsamic vinegar will work nicely, as will our 12 or 18-yr aged Balsamic Vinegars. You choose one you might like!

1 T seasoning (your choice)

* The Tasteful Olive has spice blends to choose from that can be used in a marinade recipe, or for bread dipping or meat rubs.

 

Instructions and Tips:

* Marinate for as little as 20 minutes.

* Seafood should generally not be marinated for more than an hour. Other meats can be marinated as much as 2 days ahead in the refrigerator.

* An easy way to marinate is to put meats directly from the freezer into the marinade and refrigerate overnight.

* Note: the more tender the meat, the less time it needs to marinate.
