2 garlic cloves, minced

1 red onion, minced

Fresh tarragon, thyme, parsley as desired

Lemon zest from one lemon

Sea salt and fresh cracked pepper, as desired

1/4 C Tasteful Olive's 25-year Sherry Reserva

3/4 C of a mild or medium intensity extra virgin olive oil from The Tasteful Olive


Combine all ingredients and marinate meat for 30 minutes (or up to 2 hours). Meats to use: lamb, beef, chicken ... tenderize first if needed.
