BASIL CHIFFON CAKE with LEMON BALSAMIC

Ingredients:

2-1/4 C cake flour

1-1/2 C sugar

1 T baking powder

1/2 tsp salt

1/2 C The Tasteful Olive's Basil olive oil

7 egg yolks

3/4 C orange juice

2 T orange zest

2 tsp vanilla

9 egg whites

1 tsp cream of tartar

lemon zest

 

Directions:

Sift together flour, 3/4 C sugar, baking powder and salt. Mix together liquid ingredients separately and add to flour mixture. Whisk until smooth. Beat egg whites and cream of tartar in separate bowl until stiff peak forms then add remaining sugar, and beating until glossy. Fold the egg whites/sugar mixture into the batter in 3 stages. Place in a 10" tube pan. Bake at 325 F for 1 hour. Invert and cool.

     Glaze:

     Take 1 C powdered sugar and moisten with the Lemon Sicilian balsamic ... then drizzle over the cake. Grate lemon zest over the glaze.
