Preheat oven to 350 degrees F.

Ingredients:

1-1/2 C sugar

3/4 C Tasteful Olive's Persian Lime extra virgin olive oil

2 large eggs

1 tsp vanilla

1 T Lime Juice

2-3/4 C flour

1/4 tsp salt

2 tsp Cream of Tartar

1 tsp baking soda

Decorative Sugar Crystals for topping

 

Directions:

Sift together flour, salt, cream of tartar and baking soda. Set aside.

In large mixing bowl, mix the lime olive oil and sugar. Blend in eggs, one at a time. Add vanilla and lime juice. Add flour mixture, one cup at a time, blending well after each addition.

Cover dough with plastic and refrigerate one hour.

Lightly grease cookie sheet. Shape one tablespoon of dough into a ball, place on cookie sheet and flatten with bottom of glass that has been dipped in the sugar crystals. Sprinkle more crystals on tops of cookies.

Bake for 12-14 minutes, just until set and lightly golden in color. Makes about 5 doz. large cookies.
