2 C watermelon, chopped into small pieces

2 C chopped tomatoes

3 T chopped red onions

3 T chopped Anaheim chili OR peppers (choose any or all green, red, yellow peppers)

3 T Tasteful Olive's Chipotle Extra Virgin olive oil

3 T Tasteful Olive's Tangerine Balsamic Vinegar

1/4 tsp sea salt

1/4 tsp fresh cracked black pepper



Mix together the watermelon, tomatoes, onions, peppers, salt and pepper in medium size mixing bowl. In another small bowl, briskly whisk the olive oil and balsamic vinegar until it thickens. Fold the oil and vinegar into the first mixture. Cover and refrigerate for one hour or more to blend the flavors.
