Bruschetta is a simple appetizer, normally made from toasted bread and tomatoes. This version replaces tomatoes with strawberries and adds a creamy undertone with melted mozzarella. It's the perfect party appetizer!


8 slices French bread

1 clove garlic

2 T mild or medium intensity extra virgin olive oil from The The Tasteful Olive

8 slices mozzarella cheese

16 strawberries, diced

2 T Traditional or Fig Balsamic Vinegar (from The Tasteful Olive)


Preheat oven to 350 degrees F.

Cut garlic in half and rub the cut side on the slices of French bread, then drizzle with the olive oil. Top each slice with mozzarella and bake until the cheese has melted.

While cheese is melting, mix the strawberries and balsamic vinegar. Once cheese bread is done, remove from oven and immediately top with the strawberry/balsamic vinegar mixture.

Serve warm.

Makes 8 servings.
