Ingredients:

2 C peeled zucchini, chopped

1 T Tasteful Olive medium intensity extra virgin olive oil

Juice of one, and another 1/2 lemon

3/4 C sesame seeds (hulled)

1/4 C sundried tomatoes (optional)

3/4 tsp sea salt (Himalayan Pink Sea Salt is the most healthy, and is available at The Tasteful Olive)

2 garlic cloves

1 tsp paprika

 

Directions:

Blend all ingredients in Vita-Mix (or a food processor). Be sure that you use hulled sesame seeds, which are white. * If you use a food processor, you should grind the seeds beforehand in a coffee grinder. Serve this hummus with vegetables.
